Microwave Chicken Pilaf
(Serves: Prep Time: 5min - Cook Time: 5min - Serves: 1)
Ingredients
- 2 tsp Massel Chicken-style Stock Powder
- 2 tsp ghee
- 1/2 tsp ground cumin
- 1/4 tsp ground coriander
- Pinch of ground cinnamon
- 40g (1/4 cup) frozen peas
- 75g (3/4 cup) shredded cooked chicken
- 125g tub 40-second basmati rice
- 2 tbsp raisins
- 45g (1/4 cup) roasted unsalted cashews
- 1/4 cup canned lentils, rinsed, drained
- 2 tbsp fresh coriander leaves
Method
1 Place ghee in a microwave-safe mug and microwave on HIGH (100%) for 1 minute or until melted. Stir in spices. Cook for 30 seconds. Stir in stock powder and 1 tbsp water.
2 Top with peas and chicken. Cover loosely with plastic wrap. Microwave on HIGH (100%) for 1-2 minutes or until heated through.
3 Cook rice following packet directions. Carefully turn rice out into a bowl. Top with chicken mixture. Add raisins, cashews, lentils and coriander. Season and toss gently to combine. Serve.
