Freezable 4-way Savoury Beef Mince

A classic savoury mince that you can serve as is on toast, or add 1-2 ingredients to turn it into 3 different dishes (eg. add curry powder and peas to make beef keema, add Mexican seasoning and beans to make chilli con carne, etc).
(Serves: Prep: 5min - Cook: 15min - Serves: 4)
Ingredients
- 210ml (1 1/4 cups) Massel Beef-style Liquid Stock
- 1 tbsp olive oil
- 1 brown onion, finely chopped
- 2 garlic cloves, crushed
- 500g beef mince
- 90g (1/3 cup) tomato paste
- 300g (2 cups) frozen vegetable mix
- Steamed white rice or toasted thick bread, to serve
Method
1 Heat oil in a saucepan over medium-high heat. Cook onion and mince, breaking up with a wooden spoon, for 5-6 minutes or until browned. Add garlic and cook, stirring for 30 seconds or until fragrant.
2 Add tomato paste and stir to combine. Add stock and bring to a simmer. Season. Cook, stirring occasionally, for 5 minutes or until liquid reduces slightly. Add mixed vegetables and cook, stirring occasionally, for 3-4 minutes or until tender. Serve on rice or toasted thick bread.
