Creamy Sweet Potato Soup
Coconut milk and Massel Ultracubes are the keys to making this one of the tastiest soups you will try. If you like to kick up the heat, top with a few fried jalapeño slices.
- 2 Massel Chicken Style Ultracubes or Massel Vegetable Ultracubes
- 6 cups sweet potatoes, peeled and diced
- 1½ cups water
- 1½ cups coconut milk
- 2 teaspoons thyme
- 3 garlic cloves
- 2-3 tablespoons butter or vegan butter
Add sweet potatoes, water, coconut milk, Massel Ultracubes, thyme and garlic to stock pot. Simmer over medium heat until potatoes are cooked through.
Use an immersion blender or place in blender. Process until smooth.
Blend in butter to make smooth.
Salt to taste.
