It doesn’t have to take hours to make this creamy cheddar broccoli soup. This family favourite only takes 20 minutes to make. This is comfort food at it’s best in a bowl. You can even use your leftover broccoli from the night before.
1 cup Massel Chicken Style Liquid Stock or 1 Massel 7's Chicken Stock Cube dissolved in 250ml of hot water.
1 cup broccoli florets
1/4 cup onion, grated
1/4 cup cream
1/2 to 3/4 cup sharp cheddar, grated
Add broccoli, onion, stock to a sauce pan. Simmer until broccoli is tender.
Blend soup in a blender and use an immersion blender in the sauce pan.
Return to medium heat, and adjust seasoning to taste.
