Cheesy Broccoli Soup
It doesn’t have to take hours to make this creamy cheddar broccoli soup. This family favourite only takes 20 minutes to make. This is comfort food at it’s best in a bowl. You can even use your leftover broccoli from the night before.
- 1 cup Massel Chicken Style Liquid Stock or 1 Massel 7's Chicken Stock Cube dissolved in 250ml of hot water.
- 1 cup broccoli florets
- 1/4 cup onion, grated
- 1/4 cup cream
- 1/2 to 3/4 cup sharp cheddar, grated
Add broccoli, onion, stock to a sauce pan. Simmer until broccoli is tender.
Blend soup in a blender and use an immersion blender in the sauce pan.
Return to medium heat, and adjust seasoning to taste.
Add grated cheese slowly and stir until melted.
