Black beans are an important element in Latin American cuisine, used as a side, in burritos, tacos and everything under the sun. Because of its dense and meaty composition, it serves as an excellent base for vegan and vegetarian dishes. It’s no less delicious in soup form, as our gluten-free Black Bean Soup proves! From a diet perspective, these beans are also one of the world’s healthiest foods; they are amazing for digestive tract health and are packed with protein and fiber.
Similar to chili, this recipe is great for a large group. Massel vegetable or chicken style Ultracubes will get you started with the broth while your kitchen is filled with the smells of sautéed onion and garlic. It wouldn’t be a proper latin soup without corn, too! Once everything has been blended together and cooked through, go for the gold with cilantro, jalapeños, shredded cheese and sour cream. It’s a little less healthy with those extra toppings, but we won’t tell anyone if you don’t!
Finally, if you choose to make a thicker version of the soup, it can be poured over tortilla chips for an insanely tasty vegetarian nacho platter.
