The morning rush to get out the door just got a little easier. Gone are the days where one has to skip a meal, for the Gluten-Free Beet and Ginger Soup takes a mere five minutes to prepare! Whether it is breakfast, lunch or a simple snack, everyone has time to drum up a thermos, mug or bowl of this seasonal favorite without worrying about counting calories.

Additionally, beets are rich in nutrients that may help lower your blood pressure, boost your stamina, fight inflammation, ward off multi-organ tumor formations and much more. Ginger is just as good for you, having many antibacterial, antiviral, antioxidant and anti-parasitic properties.

Aside from the cooked beets and grated ginger, all you need is a small amount of lemon juice and Massel’s vegetable style stock. Really, that’s all! The ‘puree’ setting on your blender will do the rest of the work while you sit back and marvel at an easy job well done. It gets even better: The soup can be served piping hot or at room temperature depending on how you prefer it.
