A fresh zingy soup for jaded palates
Posted on January 2, 2015 under gluten-free hot and sour soup recipe
January is traditionally the time for a pared-back approach to eating after the food juggernaut of the festive season, which starts in Thanksgiving and just keeps on rolling until the New Year.
At Massel we’re not much into cutting back on food, we like eating far too much. So instead of a list of forbidden fruits, we like to take a more generous approach to our New Year resolutions. We want more! More flavor and more healthy ingredients like fresh vegetables, legumes and herbs to kick start our systems after the rich indulgence of the last month.
This soup is a perfect example. It uses cabbage which is such a great seasonal vegetable. It’s not just tasty, but packed with vitamin K, plus a study of women showed a reduction in breast cancer when they added cruciferous vegetables like cabbage to their diet. The chili and rice vinegar take your jaded taste buds and give them a bright fresh wake up call. This recipe is gluten-free, like most Massel soup recipes, and vegan. It’s the perfect soup for January.
