Some of the best soups we’ve sampled have a Hispanic influence, taking advantage of warm-climate crops and the heat of the foods that come with them. Full-bodied flavor is always something that Massel delivers! The Spicy Corn Soup fits the bill in this regard, taking basic sweet corn to a wonderful place with the assistance of Massel’s chicken style broth made from our bouillon cubes.
The secret is in the chili peppers! They are diced and drenched in adobo sauce, which is typically paired with chipotle chilis. Adding a fair amount of poblano peppers—a more mild selection—makes the soup even more piquant and intriguing. Heavy cream thickens the soup as it simmers, but you can also use soymilk to let vegan diners join in on the fun.
It shouldn’t come as a surprise that sharp cheddar cheese and Mexican cheese blends both work excellently as garnishes. Bacon crumbles and cilantro can be dropped in as well. Salud!
