Gluten-free Mac & Cheese with a low calorie twist

I forsake any resolution that I have made for myself the moment that I see creamy mac and cheese. It’s comfort food at its best. I crave it. I love it, and I have a feeling I am not alone in my obsession. I mention mac and cheese in passing conversation and it always creates the same reaction.
“OMG, I love mac and cheese!”
However, not wanting to forgo my New Year healthy eating resolutions, I set out to create mac and cheese that would be comforting, but only have half the calories. I wanted it to be delicious, have a rich, luscious mouth feel, and no processed ingredients.
Using Massel stock and butternut squash amped up the flavor and slashed the calories. This dish has a slightly sweeter taste than classic mac and cheese, which works wonderfully. And with only 360 calories a serving, I am super happy.
I served my new Squash Mac and Cheese up to my son’s friends at an after school function. No one seemed to notice there were actually vegetables in it. The entire pot disappeared, and three mothers asked me for the recipe, so it passed the new recipe test with flying colors!
Now for the real question…am I breaking my New Year resolution if I have a second helping?
